- 1 4-6 ounce boneless, skinless chicken breast
- ¼ cup goat cheese
- 1 medium tomato, diced
- 1 garlic clove, minced
- ¼ tsp dried basil
- Salt and pepper, to taste
- Coconut oil
1.) Heat oven to 425.
2.) In a small bowl, combine cheese, tomatoes, garlic, and basil.
Season with salt and pepper and mash together with fork.
3.) Butterfly chicken by slicing horizontally along the edge of breast.
Open up each breast and spread mixture inside. Close breast over
filling and press edges to seal.
4.) In a large skillet, heat oil over medium-high heat. Add chicken and
cook until browned, about 3 minute per side. Transfer chicken to
oven and cook chicken for about 20 minutes.
5.) Remove from oven and serve warm
