This delicious Thai twist was inspired by a recent That experience that didn’t quite please the spicy craving I was looking for. The Serranos add a unique flavor that compliments the classic Thai curry taste. Here is the super tasty and healthy soup: Spicy Thai Green Curry Shrimp Soup EATgredients 1.5 tbsp Coconut Oil ½ yellow onion, chopped Cilantro (8 leaves) 14 oz. coconut milk 1/3 tbsp. honey 6 mushrooms, chopped 1 carrot, diced 1 can bamboo shoots 1 lb wild caught shrimp, peeled 1 tbsp lime juice 2 tbsp green curry paste 2 tbsp fish sauce 1 tbsp. turmeric Garnish: ½ cup cilantro, minced 2 Serrano peppers , minced ½ cup scallions, diced 1 lime, wedges Directions: 1.) Heat oil in a large saucepan, medium heat. 2.) Add onions and cilantro, stirring frequently for 5 minutes. 3.) Stir in coconut milk and honey. 4.) Reduce heat to medium, add mushrooms, bamboo shoots, and carrots, 1 minced Serrano pepper. 5.) Add shrimp and cook, stirring frequently, 1-5 minutes. 6.) Add lime juice, curry paste, and fish sauce into soup, stir. 7.) Pour soup into bowls and garnish with cilantro, serranos, and scallions. 8.) Serve with lime wedges. *Note: If you prefer a less fishy taste ease up on the fish sauce.
