Duh, Valentine’s Day is right around the corner and I am NOT procrastinating on V-Day recipes like I did last year. Here is the first of many (about 3).
These had so much flavor, I made two batches after this first one. I pop one in before a workout or before I need my mind to work just as well as my body!
Enjoy the real fruit jello recipe!
- 2 cups strawberries, pureed/de-stemmed (about 1 16 oz. carton)
- 1 cup kiwi, pureed (about 4 kiwis, peeled)
- ¼ cup coconut water, pulp-free (I like this brand)
- Juice from 1 lime
- 3 ½ Tbsp. gelatin (This brand is the best)
1.) Puree strawberries and kiwis in a Vitamix or blender (this is the one I use)
2.) Heat strawberries, kiwis, coconut water, and lime juice in sauce pan, bring to a bubble. Slowly sprinkle in gelatin, stir as you go and stir until completely dissolved.
3.) Turn off heat, pour into heart tins or you can pour into 8×8 dish to make into normal jello. Refrigerate for 2-3 hours or until jello-y.
