Sprouted Corn Cod Tacos with Watermelon Salsa

Serves: 1 (Double for 2)

Watermelon Salsa Recipe:

  • 1 cup watermelon, chopped
  • 2 Tbsp. green onion, diced
  • 1/2 cup cucumber, chopped
  • 1 Serrano, diced
  • 1 Tbsp. lime juice
  • 2 Tbsp. Cilantro, chopped
  • Salt and pepper to taste

Fish Tacos Recipe:

  • 1/4 lb. cod filets, chopped
  • 1 Tbsp. grass-fed butter
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 Food for Life Sprouted Corn Tortillas
  • 1/2 Avocado, sliced
  • 1/2 Cup watermelon Salsa

Instructions (Salsa):

1.) Mix all chopped ingredients in a large bowl. Set in refrigerator.

Instructions (Fish and Tacos):

1.) Heat skillet on medium-high heat and add a dollop of butter. Season chopped cod with seasonings.

2.) Cook cod in butter stirring until fully cooked or about 5-7 minutes on medium heat.

3.) Heat tortillas in oven on warm for 2-3 minutes (slather with coconut oil for softer tortilla)

4..) Remove tortillas from oven and plate taco by adding fish, 2 Tbsp. of salsa, and 2 slices of avocado.
