Spinach & Avocado Omelet with Bacon


• 2 eggs

• 1 Tbsp. coconut oil

• 1/2 cup spinach, chopped

• 1/2 tsp. dried basil

• Salt & pepper to taste

• 1/2 an avocado

• 2 strips bacon


1.) In a small mixing bowl whisk eggs with salt, pepper, and basil.

2.) In a small skillet heat butter over medium heat. Add the eggs, and

spread evenly. Allow eggs to cook a few minutes, while lifting the edges

to allow uncooked egg to run off the sides.

3.) Once the eggs are almost set, layer spinach over half of the omelet,

and fold over the other half. Cover and simmer for another minutes.

Serve with sliced avocado and strips of bacon cooked by your favorite
