Spinach and Carrots Frittata


  •  3 eggs
  •  1 cup spinach
  • 1 small carrot, diced
  • 2 garlic cloves, minced
  •  Salt and pepper, to taste
  • Avocado to garnish


1.) Add a dollop of butter in a skillet over medium high heat. Once

pan is hot add minced Garlic and carrots cook until browned.

2.) After five minutes add the chop spinach to cook for three more

minutes until spinach is cooked down and soft

3.) Whisk your eggs in a large bowl then add salt-and- pepper to taste

and add to the skillet

4.) Cook for an additional 5 to 10 minutes until frittata is cooked

5.) Top with avocado and serve.
