Southwest Scrambled Eggs


  •  3 eggs
  •  ½ avocado
  • Salt and pepper, to taste
  • 1 Tbsp. coconut oil
  • Salsa/Ketchup, optional


1.) Heat the oil in a skillet on medium-high heat. In a mixing bowl, whisk

the eggs with the salt and pepper. When the oil is hot, add the eggs and

cook, stirring and scrapping the bottom and sides of the pan to prevent

burning. Cook for 5-7 minutes.

2.) Top eggs with avocado and serve with salsa.
