Simple Salmon with Grapefruit & Spinach Salad

Ingredients:

• 1 (6oz) wild-caught salmon fillets or canned

• 1 tbsp. EV Olive Oil

• 1 tbsp. Dijon mustard

• 1 tbsp. fresh chives, minced

• 1 tbsp. dried dill

• 1 lemon, zested

• Salt and pepper to taste

For Salad:

• 2 cups spinach

• 1/2 grapefruit, peeled & sectioned

• 1/8 red onion, sliced

• 1 green onion, sliced

• 1 tbsp. EV Olive Oil

• 1 lemon, juiced

Directions:

1.) Preheat oven to 425 degrees.

2.) In a small bowl whisk olive oil, mustard, chives, dill, lemon zest, salt

and pepper together.

3.) Rub mixture all over the top of each salmon fillet. Place salmon

fillets on a parchment- lined baking sheet. Bake for 10-12 minutes.

4.) Mix all salad ingredients together. Toss with olive oil and fresh

lemon juice.

*Note: Make this SUPER simple and fast by using a wild canned salmon.
