- ½ cup green lentils
- ½ cup quinoa
- 1 clove garlic, minced
- ½ cup red bell pepper, diced
- ½ cup yellow onion, diced
- Salt and pepper, to taste
1.) In a medium saucepan, bring the green lentils to a boil in
approximately 1 cup of water
2.) In a separate pot, cook the quinoa in approximately 1 cup of
water, adding coconut oil and garlic, for about 20 minutes.
3.) Cook the lentils until they are soft (15 minutes). Remove from
heat and strain out water.
4.) Add the peppers and onions to the quinoa and toss to combine.
Add in cooked lentils. Toss and sprinkle salt and pepper. Serve
warm or refrigerate for later.
