Primalized Panda Express Orange Chicken and Fried Rice

Primalized Panda Express Orange Chicken and Fried Rice_700x366

If you are anything like me at one point in your health journey, ate fast food, out as restaurants and take out more than cooking. Looking back, I realized that I ate out more, because I thought I was someone who “couldn’t cook” or I “didn’t have time to prepare meals” and probably a million other excuses. Silly, I know.

Today, I have an amazing life, mostly consisting of sharing knowledge, experiences, and eating real food! Panda Express as one of my many fast food spots that I frequented in my younger days. Orange chicken was my favorite dish. I decided to attempt a Primal/paleo version of the Panda Express Orange Chicken and Fried Rice meal and it was a huge success!

With over 37 grams of GMO unsaturated vegetable oils in the fast food version, the main substitution aside from organic chicken, is coconut oil!

I am presenting the ingredients and steps in order of how I did them and most efficient way to prepare. Make the rice first, then the fried rice and the orange chicken. Enjoy, comment with questions!

Primalized Panda Express Orange Chicken and Fried Rice Recipe

Rice: 25 minutes

Fried Rice: 10 minutes

Orange Chicken: 12 minutes

Total Time: about 1 hour

Serves: 2-4

Instructions and preparation:

*Note: I recommended cutting and slicing all ingredients during the rice cooking.

  • ½ cup rice
  • 1 cup water
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 Tbsp. coconut oil/butter

Steps to crEATe:

1.)     Boil the Water: Bring the water to boil in a small sauce pan. Remember, rice expands as it cooks, so use a good size saucepan if you are unsure.

2.)    Add the Rice: When the water has come to a boil, stir in the rice, salt, pepper, and oil, and bring it back to a gentle simmer.

3.)    Cover and Cook: Cover the pot and turn the heat down to low. Taking the lid off slows down cooking time, so just be patient. Mine took about 25 minutes, so I would say 25-30 minutes.

4.)    Turn Off the Heat and Remove the Lid: When the rice is done, turn off the heat and take off the lid. Let sit for a few minutes, until dry, here is where to begin to prepare the rest of your meal.

  • 1 tsp. red chili flakes

Steps to crEATe:

1.)    In a wok (or medium size pan) add orange juice, zest, balsamic vinegar, sriracha, and coconut oil. Add the chicken, cook chicken the juices. Cook for 5 minutes.

2.)    Add pepper flakes, balsamic vinegar, ginger, stir and cook for 2-3 minutes.
