Dark Chocolate Marshmallows (Valentine’s Day Hearts)



  • 1 cup water
  • 3 Tbsp. gelatin, Non-Hydrolyzed (Great Lakes RED bottle)
  • 1 cup coconut sugar
  • ¼ cup honey
  • 1 tsp. vanilla extract
  • 1 dark chocolate bar (I used soy-free Theo brand)

Steps to crEATe:

1.) Mix 1/2 cup water and gelatin in large mixing bowl. Allow to bloom for 10 minutes.

2.) In medium sauce pan on medium-high heat, add 1/2 cup water, coconut sugar, and honey. Bring to a boil, let boil for 4 minutes.

3.) Add vanilla extract to gelatin bloom. Begin pouring honey/sugar mixture while mixing on low with hand-mixer.

4.) Mix on low for 3 minutes beginning after all liquid is poured in. Mix on HIGH for 5-8 minutes until the mixture turns into a marshmallow consistency.

5.) Add a dab of coconut oil and heat dark chocolate bar in small sauce pan on low-medium heat

6.) Grease a large pyrex dish/baking pan with coconut oil and scoop out pour batter into dish. Drizzle melted dark chocolate over marshmallow.  Refrigerate.
