Primal Buttermilk Blueberry Pancake Sandwiches_700x366

I see pictures of those griddle sandwiches served at many fast food restaurants and after a few months   of shaking my head I decided to duplicate the recipe with a MAJOR Primal twist.

Making your own buttermilk is really easy with some lemon juice or white vinegar (see below) and the rest is easy as pancake pie!

Here ya go!



  • ½ cup rice flour
  • ¼ cup coconut flour
  • ⅛ cup potato starch
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. salt


  • ½ cup buttermilk (see below to make with grass-fed raw milk and lemon juice)
  • 3 eggs
  • ½ tsp. vanilla extract
  • 3 Tbsp. coconut oil, melted
  • 4 Tbsp. honey
  • ½ cup organic blueberries (fresh or thawed frozen)


  • 1 egg
  • 2 slices of bacon

Steps to crEATe:

1.)    Prepare buttermilk with ½ cup milk and 1 ½ Tbsp. lemon juice or white vinegar, stir lightly and let sit for 5 minutes.

2.)    Mix dry ingredients in mixing bowl.

3.)    Whisk eggs in small bowl. After letting buttermilk sit for 5 minutes, combine ALL ingredients (except the egg and bacon) with dry and mix well, making sure all flour is dissolved and pancake batter consistency is formed.

4.)    Heat a skillet or frying pan over medium-high heat. Melt a pat of butter or coconut oil. When a drop of batter sizzles when it hits the pan, ladle about 1/8 cup of batter onto the pan. When bubbles dot the surface of the pancake, flip to the other side and cook until golden.

5.)    Repeat with the remaining batter.

6.)    Fry bacon in 1 tsp. coconut oil. Fry egg in bacon grease

7.)    Add one egg and 2 slices of bacon on top of one pancake, then top with 2nd pancake (see picture).

8.)    Serve with your choice of honey or maple syrup.
