Paleo-Bella Burger

While my recipes tend to be mostly “Paleoish” I don’t really consider myself a Paleo recipe blogger, chef, etc…BUT I do enjoy MOST Paleo recipes and their ideologies. I am not much of a band wagoner, I prefer to focus on the physiology of our systems and Paleo doesn’t completely align with my understanding of the body. One of the biggest objections I get to eating gluten/grain free is the lack of options for burgers. While I can’t argue the fact that 95% of burger joints don’t offer any gluten-free bun options, I can offer you an alternative to eating at a restaurant! Cook your own! This is an awesome idea with kids and/or cooking with your significant others (or by yourself)! Just eat real food, a real burger, who says a burger has to have bread buns?? Eat your carbs through sweet potato fries! Bun-free, Portabella Mushroom Grass-Fed Beef Burger (Paleo-Bella Burger) Since “bella” stands for beautiful and this meal is quite the beautiful concoction!

Portabella Mushroom Grass-Fed Beef Burger

EATgredients:

  • 2 1/3 lb. grass-fed ground beef patties
  • 2 large portabellas
  • 2 tbsp. goat cheese
  • ¼ cup green onions
  • 3 Tbsp. coconut oil
  • Balsamic vinegar
  • 1/3 red onion
  • Salt and pepper

Directions: 1.)    Heat the oven to 350°. Prepare the portabella mushrooms by cutting off any stem. Add a tbsp. coconut oil to a small baking dish (big enough to hold the mushrooms). Lay the mushrooms (head of the mushroom facing the pan), sprinkle balsamic vinegar from the bottle directly on top of mushrooms. Bake mushrooms for 10 minutes, to soften. 2.)    Prepare the beef patties. Season with salt and pepper.  Cut red onion into round slivers. Dice green onions (for garnish). 3.)    Remove mushrooms, place beef patties directly on top of mushrooms. Add onions, crumbled goat cheese (tomatoes, shredded carrots can also be added) on top of patties. Place one tbsp of coconut oil on each beef patty. 4.)    Bake for 5 minutes at 350° ( I like my meat VERY rare, so I baked for about 3 minutes, bake meat to your liking.) This type of recipe is quite easy as the picture tells a thousand words! Hope you enjoy your bun-free beautiful burger!
