If you have read at least ONE of my other recipes you know I am NOT a fan of anything with preservatives, additives, etc…AND prefer to use local, organic EATgredients whenever possible. Here is my coined term, EATgredient defined:

EATgredient: A substance that forms part of a mixture AND should either replace any given OUTgredient or constitutes 100% of meal/recipe/food stuff and does the following:

a.)    Provides MASSIVE amounts of nutrients and minerals

b.)    Promotes a healthy digestive, hormonal, and/or nervous system

c.)     Increases metabolic rate, thus allowing your body to enter into fat burning

d.)    Tastes amazing, close to nature, PRO-physiology

I am a HUGE Anti-fast food poor quality food guy, not necessarily an activist/protestor, because I feel my energies can be transferred elsewhere, LIKE creating and adapting amazing recipes from fast food items.

My NickGriddle contains about 20 ingredients that all match the criteria above.

The MacGriddle contains about 90 ingredients that I wouldn’t feed to my dog (harsh I know), but true. In my expert opinion and understanding, you should create your own version and never consume the Mac!

Here is the adapted, heathified version of the popular MacGriddle (click here to see the LONG list of OUTgredients):

 

Griddles:

EATgredients:

  • 1 ¼ cup brown rice flour
  • ¼ cup coconut flour
  • 2 ½ Tbsp. potato starch
  • 1 tsp. baking soda
  • 2 Tbsp. cinnamon
  • 3 Tbsp. sugar
  • 1 Tbsp. honey
  • 4 raw organic eggs, beaten
  • 1 cup milk, raw/lightly pasteurized grass-fed
  • 2 Tbsp. butter, grass-fed

Directions:

1.)      In large mixing pouring bowl mix brown rice flour, coconut flour, potato starth, baking soda, cinnamon, and sugar. Whisk with whisk or fork.

2.)      In small bowl add/beat eggs, add milk, 2 tbsp. melted coconut oil and 1 Tbsp. honey.

3.)      Add bowl of wet ingredients to dry ingredients, mix thoroughly with a fork or hand mixer (fork works perfectly fine. Add more milk if necessary.

4.)      Heat large pan on medium heat.  Place  ½ Tbsp. butter on pan, spread over pan/cooking area.

5.)      Once hot, pour pancake batter on pan to YOUR preferred size. Cook until golden brown or until your preference. Repeat #5 until batter is gone.

Eggs:

EATgredients:

  • 2-6 whole eggs, cage-free
  • 2 Tbsp. coconut oil

Directions:

1.)    Add coconut oil and fry egg.

2.)    Cook yolk or not, depending if you want a runny yolk for your sandwich.

Bacon:

  • 6-8 slices bacon (Applegate Farms)
  • 2 Tbsp. coconut oil

Directions:

1.)    Add coconut oil and place bacon. Cook to desired crispiness.

NickGriddle Directions:

1.)    I started the pancakes, then cooked the bacon, and fried the eggs last (the eggs are usually the fastest and easiest part.

2.)    Simply, place an egg and 2 strips of bacon (cut in half) on first griddle/pancake, IF you have want/have cheese, pictured below is the cheese I would use or any other raw, grass-fed cheese would be perfect/preffered.

3.)    Top griddle with another griddle. Repeat!

Note: If you want to use cheese, use a raw cheese or KerryGold grass-fed cheese!
