Mexican Burgers topped with Easy Guacamole and Sautéed Sweet Potatoes

Ingredients:

• ¼ lb grass-fed ground beef

• 1/4 red onion, minced

• 1 tbsp. fresh cilantro, chopped

• 1 garlic clove, minced

• 1/2 tsp. chili powder

• 1/2 tsp. ground cumin

• 1/2 tsp. salt

• 1/4 tsp. black pepper

• 1 tbsp. coconut oil (for frying)

Easy Guacamole

• 1/2 an avocado, mashed

• 1 tsp. red onion, minced

• 1/4 a jalapeno pepper, minced

• 1/2 tsp. fresh cilantro, chopped

• 1/2 lime, juiced

• Salt and pepper to taste

Sweet Potatoes

• 1 large sweet potato, cubed

• 2 tbsp. coconut oil, melted

• 1/2 tsp. chili powder

• 1/4 tsp. ground cinnamon

• Salt & pepper to taste

Directions:

1.) Combine the ground beef with red onion, cilantro, garlic, and spices.

Form mixture into a patty.

2.) Preheat oven to 400 degrees.

3.) In a bowl toss the cubed sweet potato with oil, and spices. Spread

onto a rimmed baking sheet. Bake for 30 minutes, tossing halfway

through baking time.

4.) While potatoes are roasting, whip up your guacamole by combining

all ingredients in a small bowl.

5.) Melt the tablespoon of coconut oil in a large skillet over medium

heat. Fry beef patties for 5 minutes on each side, or until they have

reached your desired doneness.
