Kale, Mushroom Egg Scramble with Blueberries

Ingredients:

  • 2 eggs
  • 1 cup kale, chopped
  • 1 cup mushrooms, chopped
  • Salt and pepper, to taste
  • Coconut oil

Directions:

1.) Heat a skillet over medium heat. Add the coconut oil. Then add kale

and mushrooms. Saute for about 5 minutes.

2.) While the veggies are cooking. Whisk eggs in a small bowl. Add a

small amount of coconut oil to skillet and add eggs. Cook for a few

minutes.

3.) Season with salt and pepper. Serve with a side of blueberries.
