I am a HUGE promoter of grass-fed based gelatin as a protein and for its anti-inflammatory properties, so when I received a question asking about “healthy Jello”, I got to WORK!
Here is my version of “Watermelon Jello.”
Made with fresh squeezed watermelon, pulp-free fresh squeezed OJ, and Great Lakes Gelatin. 3 healthy ingredients and 1 step (kinda)!

- 3 cups fresh watermelon juice (I used this blender)
- ½ cup pulp-free OJ
- 3 Tbsp. Great Lakes Unflavored Gelatin (non-hydrolyed/red bottle)
1.) Heat watermelon and orange juice in medium sauce pan, bring to a bubble. Sprinkle in gelatin, stir until completely dissolved. Turn off heat, pour into 8×8 coconut oil greased Pyrex. Refrigerate for 2-3 hours. BOOM!
To make the watermelon juice: In food processor/Vitamix, puree the watermelon, then just use a sifter to sift the watermelon pulp/meat and keep the juice!
