Herb Crusted Salmon with Simple Kale Sauté


• 1 (4oz) salmon fillet

• 1 tbsp. dried parsley

• 1/2 tbsp. EV olive oil

• 1/2 tbsp. Dijon mustard

• Salt and pepper to taste

Kale Sauté

• ½ bunch curly kale, chopped

• ½ Tbsp. EV olive oil

• 1 garlic clove, minced

• Salt and pepper to taste


1.) Preheat oven to 450 degrees.

2.) Place the salmon fillet in a baking dish. Rub the salmon all over

with the olive oil and mustard. In a small bowl combine the dried

parsley, salt and pepper. Top the salmon fillet with this mixture

and pat it down. Bake in the oven for 15 minutes.

3.) While salmon is baking, prepare the kale. In a large skillet over

medium add the olive oil and garlic and sauté until fragrant.

Then, add the kale greens. Continue to sauté until they have

wilted completely. Season with salt and pepper to your liking.
