Grilled Lemon Pepper Salmon with Tomatoes and Spinach


  •  1 (4-6 ounce) salmon fillet
  •  1 Tbsp. butter
  • Lemon pepper to taste
  •  Salt to taste
  •  ½ medium onion, chopped
  •  ½ medium tomato, chopped
  •  1 cup spinach
  •  1 garlic clove
  •  1 lemon wedge


1.) Heat the oven to broil. Add butter to baking dish.

2.) Place salmon, flesh side up, in the baking dish, season with salt and

lemon pepper, and broil without turning salmon until salmon is cooked

through, 8-12 minutes.

3.) In a large saucepan, heat coconut oil over medium heat. Add onion

and garlic, stirring occasionally, until soft. Stir in tomatoes and spinach.

Cook for 2-3 minutes.

4.) Remove the pan from heat.

5.) Remove salmon from broiler and transfer to plate. Spook tomato

mixture over salmon, squeeze lemon over, serve warm.
