Greek Salad with Turkey and Cucumber-Guacamole


• 1/2 lb. ground turkey

• 1/4 yellow onion, chopped

• 1 garlic clove, minced

• 1/4 tsp. dried oregano

• 1/4 tsp. dried dill

• 1/2 a lemon, juiced

• Salt and pepper to taste

• 3 cups iceberg or romaine lettuce, chopped

• 1 tomato, chopped

Cucumber-Guacamole (Serves 1)

• 1/2 an avocado

• 1/4 a cucumber, grated

• 1 tsp. fresh mint, chopped

• 1/2 lemon, juiced

• Salt and pepper to taste


1.) In a large skillet sauté the ground lamb over medium heat until

almost brown. Add the onion, garlic, salt/pepper, and continue to cook

until onion is soft and lamb is fully cooked. Squeeze lemon juice over

the lamb and stir in the dried oregano and dill.

2.) Meanwhile, add all of the cucumber- guacamole ingredients to a

food processor and process until mostly smooth but still chunky. If you

do not have a food processor, you can simply mash everything together

with a fork.

3.) Plate romaine lettuce, and spoon cooked lamb on top. Add chopped

tomatoes, and finish it off with the cucumber-guacamole.
