Grass-Fed Beef Meatballs on Bell Pepper Sliders w Cranberry Glaze_700x366

Holiday parties can make or break you and your family. I don’t mean your family, I mean the food! There are many creative ways to include healthy and fun food options that won’t break the bank or the buckle.

A recipe that takes me a few hours to create, cook, and type you can do in 30-45 minutes. Really easy all the way around, the hardest part is not eating them all before your guests arrive.

Total Time: 30 minutes


Mushroom Meatball Sliders:

  • 1 lb. grass-fed beef, ground
  • 1 cup baby portabella mushrooms, shredded/processed (about 8-9)
  • ¼ cup red onion, shredded/processed
  • Salt and pepper
  • Pinch garlic powder
  • 1 tsp. parsley
  • 2 Tbsp. coconut oil


  • 3-4 green bell peppers, small squares
  • 2-3 red bell peppers, small squares

Cranberry Glaze:

Steps to CrEATe:

1.)    In food processor, process mushrooms, then red onions. Add to 1 lb. beef in large bowl. Add seasonings and coconut oil  set aside.

2.)    Cut and chop red bell peppers into small squares, mine were 1 ½ inches and I have meat left over, you could do 2” x 2” inches. I made 12 green and 9 red, you can make more depending on the size of your party. Set squares on large cooking tray. Heat oven to broil 400°

3.)    Rollin into 1 ½” meatballs, I made 21 with 21 bell pepper squares. Place one meatball on top of each bell pepper square.

4.)    Broil for 10 minutes. While broiling, make your cranberry glaze…

5.)    Combine all ingredients in a small sauce pan, heat to low-medium, stirring frequently.

6.)    Remove meatballs and add 1-2 tsp. cranberry glaze on each slider. Make into the shape of a Christmas Tree or wreath or just place them on a plate.
