Grass-Fed Beef and Veggie Bowl

  • 1/2 cup cooked quinoa
  • 2 cups spinach
  •  3 oz. ground beef,
  • 1/2 cup chopped broccoli florets
  • 1/4 red bell pepper, chopped
  • 1/4 onion, sliced
  • 2 tsp coconut oil
  • 1 tsp balsamic vinegar
  • Salt and pepper, to taste


1.) Cook quinoa as directed.

2.) Add coconut oil to a skillet on medium-high heat add onions, bell pepper, broccoli, and beef (seasoned with salt and pepper). Cook for 5 minutes, stirring frequently. Add in balsamic vinegar. Stir and cook for 2-3 more minutes. Add spinach. Remove from heat when vegetables are soft and beef is cooked.

2.) Spoon beef and vegetables over quinoa.
