Gluten-Free Rice and Tapioca Flour Waffles

Makes: 8-10 waffles

Total Meal Time: 30 minutes


• 1 cup brown rice flour

• 1 cup white rice flour

• 1⁄2 cup tapioca flour/starch

• 1 tsp. baking soda

• 1 Tbsp. organic sugar or 1 Tbsp. raw honey

• 1 tsp. salt

• 2 Tbsp. coconut oil, melted

• 1 tsp. vanilla extract

• 2 eggs

• 1 cup buttermilk (1 cup organic milk and 1 Tbsp. lemon juice or white vinegar)


1.) Plug in and turn on waffle iron. Combine milk and lemon juice and let sit for 5 minutes, so it

forms buttermilk.

2.) Combine all dry ingredients.

3.) Once buttermilk is formed, combine milk, eggs, vanilla, and coconut oil, whisk…then add into

dry ingredients. Combine thoroughly.

4.) Add batter into waffle iron and cook until desired crispiness.
