Gluten-Free Pepperoni and Mushroom Pizza

  • 1 cup pizza sauce ( I used Muir Glen Organic Garlic Sauce)
  • 1 cup grass-fed cheddar cheese
  • 8 Pepperonis ( I used Applegate)
  • 1 1/2 cup portabella mushrooms, chopped

Steps to crEATe:

1.)    Pre-heat oven to 400°. Combine flours and spices/herbs in large mixing bowl. Set aside.

2.)    In a saucepan on medium heat, combine milk and butter and bring to a simmer. Remove from heat when it starts to bubble. Let cool for 3 minutes.

3.)    Add milk and butter mixture to dry ingredients. Mix well.

4.)    Add eggs and cheese. Mix well until a dough forms.

5.)    Place the dough on a pizza stone (or pan if you don’t have a stone). Spread with a spreading tool as thin as you can since it will rise slightly.

6.)    Bake in oven for 5 minutes. Remove and poke a few holes with a fork to allow for air flow. Bake for 5-8 more minutes.

7.) Remove crust from oven. Spread sauce, add cheese, add pepperonis, and mushrooms.

8.)    Bake for an additional 5-8 minutes.
