Coconut Flour Chicken Tenders
The majority of chicken tenders are breaded with some of the un-healthiest mixes you can imagine. Enriched flours, wheat flours, and xanthum gums are among a few ingredients you will find in most processed breading or conventional breading recipes. You do not have to sacrifice taste or consistency for altering ingredients.
In fact, the flavors are enhanced with better quality ingredients!
Below is a very simple gluten-free coconut flour breaded chicken tender. Only the finest ingredients are used, local when possible.
Gluten-Free Coconut Flour Chicken Tenders
- 1 lb. chicken tenders, organic
- ½ cup coconut flour
- 2 tbsp. potato starch
- 1 tbsp. sea salt
- 1 tbsp. black pepper
- 1 tbsp. rosemary
- ½ cup coconut, shredded
- 1 egg, whole
- 2 tbsp. coconut oil, melted
- 5 tbsp. coconut oil, for frying
1.) Heat a large sauce pan on medium-high heat with 5 tbsp. of coconut oil.
2.) Get 3 small-medium bowls and line them up.
- Bowl #1: Coconut flour, potato starch, salt, pepper, rosemary
- Bowl #2: Egg, coconut oil
- Bowl #3: Shredded coconut
3.) Dip each raw chicken tender in sequence, bowl 1, 2, and 3 evenly coating each tender. Place each tender in coconut oil frying pan. If you have left over coconut shreds you can sprinkle them on top of frying tenders.
4.) Flip each tender after about 3-4 minutes of frying and keep flipping until crisp golden brown breading forms. Be careful when flipping the tenders as the batter can come off if flipped forcefully! Be TENDER with your TENDERS. (corny I know)
