Try these delicious gluten-free cinnamon roll-esque muffins. Most similar recipes use WAY too much sugar, so this recipe is about half the amount of sugar of most recipes.
The good news is the taste is still delicious and it makes for a satisfying dessert treat or dessert muffins for a party.
Makes 12 Muffins
- 4 Tbsp. grass-fed butter
- 1/2 cup sugar
- 1 egg
- 1 cup rice flour
- ¼ cup potato starch
- 1 tsp. baking soda
- ¾ cup milk
- 2 Tbsp. honey
- 2 Tbsp. sugar
- 2 tsp. cinnamon
- ½ cup powdered sugar
- 2 Tbsp. milk
1.) Preheat oven to 350°
2.) Mix cinnamon mixture ingredients well. Set aside.
3.) In a mixer, cream the butter and sugar together. Add the egg and continue mixing until creamy.
4.) Mix together the rice flour, potato starch, and baking soda in a large bowl. Add the butter mixture and milk. Continue to mix until well blended.
5.) In a coconut oil greased muffin tin, spoon a Tablespoon full of batter in each muffin compartment. Add a small amount of cinnamon mixture to the center of the batter. Repeat with all 12 muffins.
6.) Bake for 15 minutes, or until toothpick inserted into the center comes out clean.
7.) Allow the muffins to cool. If you’re using glaze, mix up the milk and powered sugar. Drizzle over the cooled muffins
