I just discovered this delicious and pretty healthy protein powder from BioTrust. While I’m usually a “only eat protein from organic, grass-fed sources.” This protein comes pretty close to meeting my high standards.
Not to mention it’s delicious in pancake form. Which is pretty convenient since most pancakes are on the very high-glycemic side, so adding a protein powder helps balance the macronutrients.
My 2-year old Sienna LOVES these pancakes and my wife pretty much has been begging me to make these every weekend now, so I figured it was a WIN for daddy pancake recipes.
Recipe For Gluten-Free BioTrust Vanilla Protein Pancakes
*Makes About 6, 6″ Pancakes
- 1 cup white rice flour (I use this brand)
- ½ cup BioTrust vanilla cream protein powder (This is the tastiest brand)
- ¼ cup tapioca starch (I use this one)
- 1 tsp. baking soda
- ¼ tsp. sea salt
- ¾ cup organic, grass-fed milk
- 2 Tbsp. unfiltered honey (raw like this one)
- 2 pastured eggs
- 2 Tbsp. coconut oil, melted/room-temperature
- Grass-fed butter for frying
1.) In large mixing pouring bowl mix rice flour, tapioca starch, Biotrust protein powder, baking soda, and salt. Whisk, set aside.
2.) In small bowl whisk eggs, add milk, 2 tbsp. melted coconut oil.
3.) Add bowl of wet ingredients to dry ingredients, add honey, then mix thoroughly with a fork or hand mixer (fork works perfectly fine).
4.) Heat large pan on medium heat. Place ½ Tbsp. butter on pan, spread over pan/cooking area.
5.) Once hot, pour pancake batter on pan to your preferred size. Cook until golden brown or until your preference. Repeat #5 until batter is gone.
