Gluten-Free Bacon and Egg Breakfast Pizza_700x366

I remember being in high school and SO looking forward to breakfast pizza day, because I thought it tasted WAY better than regular pizza day. This is my very first breakfast pizza and it was amazing, I tweaked the crust recipe from this pizza recipe.

The potential for toppings are endless after you master the gluten-free pizza crust.





  • 1 cup tapioca flour
  • ½ cup brown rice flour
  • 1 tsp. salt
  • ½ tsp. oregano
  • ¼ tsp. white pepper
  • ½ tsp. black pepper


  • ½ cup milk
  • 2 Tbsp. butter
  • 1 Tbsp. coconut oil
  • 1 egg
  • 1 tsp. honey
  • 1 cup cheddar cheese, grated


  • 8 slices bacon, sliced
  • ½ cup green bell pepper, diced
  • ½ cup green onion, diced
  • 1 cup cheddar cheese, grated
  • 4 oz. goat cheese, cut into bite-size pieces
  • 4 fried eggs (in 2 Tbsp. coconut oil)

* Flour Note: You can sub the brown rice flour with HALF coconut flour (1/4 cup) OR use ALL tapioca flour (1 1/2 cups).

*Milk Note: You can sub the milk (I used raw milk) with coconut milk.

*Butter Note: You can use all coconut oil.

*Pepper Note: If you don’t have white pepper, you can just use all black pepper.

Steps to crEATe:

1.)    Pre heat oven to 450°. Combine flours and spices/herbs in large mixing bowl. Set aside.

2.)    In a saucepan on medium heat, combine milk, butter, coconut oil and bring to a simmer. Remove from heat when it starts to bubble. Let cool for 2 minutes.

3.)    Add warm mixture to dry ingredients. Let the mixture cool for 5 minutes.

4.)    Add whisked egg to mixture. Add cheese. Mix well until a slightly doughy mixture forms.

5.)    Spread the dough on a rectangular pan. Spread with a spreading tool as thin as you can since it will rise slightly.

6.)    Bake in oven for 10-12 minutes. Remove and poke a few holes with a fork to allow for air flow. Let cool for 5 minutes.

7.) While dough bakes and cools, prepare toppings. Chop bacon and fry until crispy. Finely dice green bell pepper and onions, or whatever vegetable you’d like. Grate cheese and cut goat.

8.) Place cheese, bacon, and vegetables.

9.) Bake with toppings for an additional 8 minutes.

10.) Fry 4 eggs in coconut oil to place on top of pizza. See pictures!
