- 1 chicken breast
- 1 garlic clove, minced
- 1 Tbsp. olive oil
- 2 cups spinach
- 1 cucumber, sliced
- 1 small tomato, chopped
- Salt and pepper, to taste
1.) Heat a medium skillet over medium-high heat. Pound the chicken
breast using a meat tenderizer, or slice your chicken breast in half
to speed up the cooking process.
2.) Toss the chicken in a bowl and add garlic, olive oil, salt and
pepper. Toss to coat. Place the chicken on the hot skillet; cook for
6 to 8 minutes on each side. Transfer chicken to cutting board and
cut into slices.
3.) Place spinach, tomato, and cucumbers in a bowl. Add chicken
slices, toss and enjoy. Add balsamic vinegar if you wish.
