Flat Belly Metabolic Migas

Ingredients:

  •  1 organic corn tortillas
  •  2 eggs
  •  1 slice of bacon, chopped
  •  ¼ cup onion, diced
  •  1 small carrot, diced
  •  ¼ cup red bell pepper, diced
  •  ¼ cup green onion, diced
  • ¼ cup tomato, diced
  • Salt and pepper, to taste
  •  Avocado, optional
  •  1 Tbsp. coconut oil

Directions:

1.) Slice tortillas into triangles, yielding 4-6 small triangles per tortilla.

2.) On Medium Heat 1 Tbsp. coconut oil in large pan, place tortilla

triangles in oil and fry, flipping triangles until slightly crispy, about 6

minutes.

3.) Add bacon and vegetables. While they cook whisk eggs in a small

bowl.

4.) Add eggs, season with salt, and pepper. Scramble and cook for 2-3

minutes.

7.) Serve warm, garnish with green onion and avocado.
