- 2 eggs
- ½ cup sweet potatoes, chopped
- 2 oz. goat cheese
- 1 cup spinach, optional
- 1 cup of fruit
- 1 Tbsp. butter
- Salt and pepper, to taste
1.) Add 1 Tbsp. of butter to skillet on medium heat. Add sweet
potatoes. Cook for about 8 minutes.
2.) Whisk eggs in small bowl with a pinch of salt and pepper.
2.) Once skillet it hot, add spinach. Once spinach cooks down (about 3
minutes), add egg mixture. Stir and scrap the sides to prevent burning
3.) Add in goat cheese and cook for about 1 more minute, stirring in.
4.) Scramble and serve with 1 cup of fruit of your choice.
