Deep Dish Primal Fruit Pizza

  • 1 ½ cup rice flour (brown or white, I used white)
  • ½ cup coconut flour
  • ¼ cup tapioca starch (or potato)
  • 1 ½ tsp. baking soda
  • ½ tsp. salt

  • 8 Tbsp. grass-fed butter, room temp
  • ⅓ cup honey
  • 2 tsp. orange zest
  • 1 tsp. vanilla extract
  • 4 Tbsp. coconut oil, melted
  • 3 eggs
  • ¼ cup grass-fed milk (I used raw), you can sub full fat coconut milk

  • 8 oz. goat cheese, room temp
  • 4 Tbsp. butter, room temp
  • ¼ cup honey
  • 2 tsp. orange juice
  • 1 tsp. vanilla extract
  • ¼ cup coconut milk (Add in 1 Tbsp. at a time)

  • Strawberries
  • Kiwi
  • Mango
  • Blackberries
  • Any other fruit!

Steps to crEATE:

1.)    Heat oven to 425° and grease a large circular pizza pan. Set aside.

2.)    Combine all dry ingredients in large mixing bowl. Set aside

3.)    Whisk eggs in separate bowl. Set aside. Melt coconut oil. Chop up the butter into tiny chunks. Begin adding ALL wet ingredients to dry, stirring and mixing well. Mix until a doughy (but not THAT doughy) ball forms. Place batter on greased pizza tray, divide batter evenly. (if for some reason you don’t have the large pan, grease 2 and make it work)

4.)    Bake crust for 10-12 minutes or until a golden brown, tine. Remove and let cool for 12 minutes. During baking and cooling, prepare the frosting and chop the fruit.

1.)    Chop fruit.

2.)    In large mixing bowl, add goat cheese and butter (very important that they are room temperature) Combine until fluffy. Add the rest of the ingredients, except the coconut milk. Add 1 Tbsp. of coconut milk at a time, I added 4 , which is ¼ cup. Combine well with fork. It should fluff up nice!

3.)    Place in refrigerator for 10 minutes.

1.)    Spread onto cooled “pizza” crust, then decorate the top generously with sliced fruit. Slice into Christmas shapes, squares or wedges and serve.
