If you ever mess up a coconut flour recipe, especially muffins and you feeling a little disappointed or discouraged, always, always do this recipe after to build confidence.

Seriously, this is an almost impossible sweet potato muffin recipe using coconut flour recipe to mess up.

Paleo muffin recipes can be tricky since you normally substitute ingredients that have been made the “norm.”  It always excites me when you create a Primal recipe that people would prefer over the sugar, gluten, and crap filled counterpart. Doesn’t it get you pumped up about real food?

Paleo Coconut Flour Sweet Potato Muffins



  • ½ cup coconut flour
  • ⅛ cup potato starch
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • ½ tsp. ginger


  • ½ cup coconut oil, melted
  • ¼ cup honey
  • 1 Tbsp. vanilla extract
  • 4 eggs
  • 1 cup sweet potato puree
  • ¼ cup applesauce, unsweetened

Steps to crEATe:

1.)    Preheat oven to 350°; prepare muffin tin with paper liners or grease with coconut oil. Set aside.

2.)    In large mixing bowl combine dry ingredients. Sift and whisk with fork. Set aside.

3.)    In small bowl, whisk eggs for 30 seconds. Set aside.

4.)    Combine all wet ingredients with dry ingredients. Mix very well, making sure all flour is dissolved.

5.) Divide equal amounts batter in muffin compartments. Bake for 20 minutes at 350. Serve warm!
