Coconut Flour Flatbread Breakfast Sandwiches

Coconut Flour Flatbread Breakfast Sandwiches_700x366

Makes: 4 bun sized flatbreads

Bake Time:  about 11 minutes


  • ¼ cup coconut flour
  • 1 Tbsp. tapioca flour
  • 1/8 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs
  • 2 Tbsp. coconut milk
  • 2 Tbsp. coconut oil, melted
  • 1 Tbsp. honey (optional)


  • 4 eggs
  • 4 slices bacon, sliced in 3 inch slices

Steps to crEATe:

1.)    Preheat oven to 350° and grease 4 hamburger bun compartments (you could also spread batter on baking paper).

2.)    Combine all ingredients; mix with fork until all flours are dissolved.

3.)    Spread batter evenly on hamburger bun sheet or evenly on baking paper (about the size of a hamburger bun).

4.)    Bake for 10-12 minutes or until golden brown.

5.)    Remove from oven. Cook eggs and bacon.

6.)    Make open-faced sandwiches.

*Note: I started the bacon before the flatbread was done baking.
