- 1 cup coconut flour
- 2 Tbsp. tapioca starch (or potato starch)
- ½ tsp. baking soda
- ½ tsp. salt
- ½ cup coconut shreds, unsweetened
- ¼ cup coconut oil, melted
- 1/3 cup honey
- 1/3 cup coconut milk, full-fat
- 1 egg
- ½ tsp. vanilla extract
- ½ – 2/3 cup Enjoy Life Chocolate Chips
Steps to crEATe:
1.) Preheat oven to 350°. Grease an 8×8 inch pyrex. Set aside.
2.) Combine dry ingredients in large mixing bowl. Set aside.
3.) Combine egg, vanilla, coconut milk, coconut oil, mix well.
4.) Add wet to dry. Add honey. Mix with hand mixer until completely mixed, it will resemble a batter, with clumps. In other words, it won’t pour, you will need to spread.
5.) Add/fold in chocolate chips with a fork, spreading and mixing then in.
6.) Spread batter evenly over baking dish. Bake for 15-18 minutes. I went to 20 minutes, because I like the outside crispy!
7.) Serve warm with raw milk!
