Coconut Flour Carrot Muffins

A simple recipe with an amazing taste.

Makes: 12 muffins

Total Time: 20 minutes

EATgredients:

Dry:

  • ½ cup coconut flour
  • ¼ cup tapioca flour/starch
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. ginger

Wet:

  • 3 eggs
  • ½ cup coconut milk
  • ¼ cup coconut oil, melted
  • ¼ cup + 1 Tbsp. honey
  • 1 ½ tsp. vanilla extract
  • 1 cup carrots, grated

Steps to crEATe:

1.)    Heat oven to 350° and place muffin papers into compartments (or grease muffin tin). Set aside.

2.)    Grate carrots in processor or by hand. Set aside.

3.)    Combine dry ingredients in large mixing bowl. Set aside.

4.)    Whisk eggs in small bowl. Combine all wet ingredients (except the carrots) in with dry ingredients, mixing well until all flour is dissolved.

5.)    Add in carrots, fold in and mix well. Divide batter evenly in muffin compartments.

6.)    Bake for 15 minutes at 350°. Serve warm.
