Makes: 12 muffins
- ½ cup coconut flour
- ¼ cup tapioca flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 Tbsp. cinnamon
- 4 eggs
- ¼ cup coconut oil, melted
- ¼ cup honey
- 4 ripe bananas, mashed
- 1½ cup carrots, shredded
Steps to crEATe:
1.) Heat oven to 350° and add muffin papers to 12 compartments. Set aside.
2.) Mash bananas and shred carrots. Melt coconut oil. Set aside.
3.) Combine all dry ingredients in large mixing bowl. Set aside
4.) Whisk eggs in separate bowl. Combine all wet ingredients with dry ingredients, until flour is dissolved.
5.) Add bananas and carrots, mix well until all combined.
6.) Divide batter evenly in muffin compartments. Bake for 18 minutes or until golden brown top develops. Serve warm (or cool) they taste great either way.
