Had a recipe in the books that I called “Banana, Chocolate Chip Muffins”, which I was going to re-make, which I started to re-make, which ended up being THIS. 2013 is going to be a BOLD year, with crazy recipe combinations, that work (at least most of time).  You will see the most insane muffin combinations, but I will always keep in Primal and awesome tasting. Here are your Paleo Bacon, Banana, Chocolate Chip Muffins: Makes: 12 muffins Total Time: 30 minutes EATgredients: Dry:

  • ½ cup + 1 Tbsp. coconut flour
  • ¼ cup tapioca flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. cinnamon


  • ¼ cup coconut oil, melted
  • 3 eggs
  • 1 tsp. vanilla extract
  • ½ cup coconut milk, full-fat
  • ¼ cup honey


  • 7 slices bacon
  • 2 ripe bananas, mashed
  • ¾ cup chocolate chips

Steps to crEATe: 1.)    Heat oven to 350° and add 12 muffin papers into compartments. Set aside. 2.)    Slice bacon slices into bite-size pieces. Cook half-way to ¾ on medium heat in skillet. Stir frequently. 3.)    Mash bananas. Set aside. 4.)    Add dry ingredients to large mixing bowl. Set aside. Whisk eggs in small bowl. Set aside. Melt coconut oil. Set aside. 5.)    Once bacon is done cooking. Add in all wet ingredients to dry ingredients. Mix with mixer or by hand with a fork. 6.)    Add in bananas and ¾ bacon. Fold in and mix. Add chocolate chips last, fold in and mix. Divide batter evenly in muffin compartments. Add remaining bacon on the tops of the muffins. 7.)    Bake for 16-18 minutes. Serve warm!
