w/ parsley potatoes and carrots

A perfect ratio Primal meal…

EATgredients:

  • 4 eggs
  • 8 sprigs cilantro
  • ¼ cup green onion, diced
  • ¼ cup tomato, diced
  • Salt and pepper to taste
  • 1-2 Tbsp. coconut oil

Sides:

  • 1 small potato, coined
  • 1 medium carrot, coined
  • Parsley
  • Salt and pepper to taste
  • 1-2 Tbsp. coconut oil

Steps to crEATe:

1.)    Whisk 4 eggs for 20 seconds with fork or whisk. Set aside. Chop green onions, cilantro, and tomato. Set aside. Chop potatoes and carrots. Set aside.

2.)    For potatoes and carrots (they will take longer): Heat skillet to medium-high, add 2 Tbsp. coconut oil or grass-fed butter, add in chopped potatoes and carrots, season with parsley, salt, and pepper. Cover and stir until cooked, about 6 minutes.

3.)    For eggs: Heat skillet to medium heat, add 2 Tbsp. coconut oil. Once heated add in tomato, onions, and cilantro, cook for 2 minutes, add whisked eggs, season with salt and pepper. Scramble for 1-2 minutes, depending on heat.

4.)    Serve warm, with organic ketchup!
