Chocolate Bacon Cupcakes with Goat Cheese Honey Frosting_700x366I made/created these cupcakes for my friend’s birthday, although a few days late I would see they were a HUGE hit with him and other lucky friends who taste tested! I don’t know what it is about chocolate and bacon, especially in the Primal/Paleo recipe world, we love the combination and it seems to be a hit with the readers and followers. I suppose there are an unlimited amount of ways to combine chocolate and bacon, here is mine!

Chocolate Bacon Cupcakes  with Goat Cheese Honey Frosting Recipe

Makes: 12 cupcakes Total Time: about 35 minutes EATgredients: Dry:

  • 1 cup white rice flour
  • 2/3 cup tapioca flour
  • ¼ cup coconut flour
  • 1 tsp. baking soda
  • 1/3 cup cocoa powder
  • ½ tsp. salt

*Flour Note: You can sub ALL tapioca flour in place of white rice OR to do ALL coconut flour use 1 cup coconut flour for entire recipe (grain-free). A good idea would be 1 cup coconut flour and 1/8 cup tapioca. Wet:

  • 1 cup milk (I used grass-fed raw)
  • 4 Tbsp. butter, room temp
  • 4 Tbsp. coconut oil, melted
  • 3 eggs
  • ½ cup honey
  • 2 tsp. vanilla extract


  • ½ cup cooked bacon, chopped (about 4-5 slices)

Steps to crEATe: 1.)    Heat oven to 350° and line cupcake papers in 12 cupcake compartments. Set aside. 2.)    Chop and dice bacon. Cook in skillet for 5 minutes or until about half-cooked. Melt coconut oil in small sauce pan. 3.)    Combine dry ingredients in large mixing bowl, set aside. 4.)    Whisk eggs in separate bowl. Lightly whisk room temperature butter. 5.)    Combine wet ingredients to dry ingredients. Mix with fork or hand mixer until all a flour is dissolved. 6.)    Fold in slightly cooked bacon. 7.)    Divide batter evenly into cupcakes papers (my cupcakes were HUGE) so be generous. 8.)    Bake for 12-14 minutes. Don’t overbake! Remove and let cool. While cupcakes bake prepare Honey Goat Cheese Frosting (see below).

Honey Goat Cheese Frosting Recipe:


  • 8 Tbsp. butter, room temperature
  • 8 oz. goat cheese, room temperature
  • ½ cup honey
  • 1 tsp. salt
  • ½ tsp. vanilla extract
  • ½ cup cooked bacon, chopped (about 4-5 slices)

Steps to crEATe: 1.)    With a hand mixer whisk/mix all ingredients EXCEPT bacon in large mixing bowl until creamy and a frosting consistency forms. 2.)    Use chopped bacon to top each individual cupcake after spreading frosting.
