- 4-6 Large Wild-Caught Shrimp
- ¼ cup red bell pepper, diced
- ¼ cup red onion, diced
- ¼ cup green onion, chopped
- 1 medium carrot, diced
- ½ cup bamboo shoots, diced
- ½ cup golden beets, diced
- ½ cup cilantro
- 2 limes, for juice and garnish
- 2 tsp. chili powder
- 2 Tbsp. coconut oil
- Salt and pepper
Steps to crEATe:
1.) Peel shrimp and place in bowl. Add juice of one lime, chili powder, salt and pepper, let sit.
2.) Chop and prepare vegetables. Set aside.
3.) Heat medium skillet on medium-high heat. Add coconut oil. Add beets, carrots, shoots, bell pepper, ½ of cilantro, and red onion. Stir and cover off and on for 5 minutes.
4.) Move vegetables to one side of the pan. Add shrimp to opposite side, add more coconut oil if needed.
5.) Stir and cook shrimp for 5 minutes. Stir vegetables on the opposite making sure they don’t sit too long on one side. Add green onions.
6.) Set shrimp on top of vegetables, garnish with lime and cilantro and chili powder. Enjoy warm!
