Chicken Cobb Salad


• ¼ lb chicken breast, cubed

• 1 cup mixed greens

• 1 cup romaine lettuce, chopped

• 1/4 cup cherry tomatoes, halved

• 1 hard-boiled egg, chopped

• 2 slices of cooked bacon, chopped (optional)

• 1/2 avocado, cubed

• 2 tbsp. EV olive oil

• 1 tbsp. balsamic vinegar

• 1 tsp. Dijon mustard

• Pinch of dried basil and thyme


1.) Add 1 Tbsp. coconut oil to skillet on medium high heat. Grill chicken

cubes and bacon. Cook and stir occasionally. Cook for about 15


2.) Whisk EV olive oil, balsamic vinegar, mustard, basil and thyme

together until well blended.

3.) You can toss the salad greens with the dressing and then arrange

chicken and other items on top. Or, you can simply toss everything

together at once!
