California Avocado and Chicken Salad


  •  1 4 ounce chicken breast
  •  1 tsp. ground ginger
  • 1 tsp. olive oil
  •  Juice from 1 lime
  •  1 Tbsp. cilantro, chopped
  •  2 cups fresh mixed greens
  •  1 small avocado or ½ medium/large avocado
  •  1 peach, peeled or sliced
  •  1 Tbsp. red onion


1.) Preheat oven to 350.

2.) Sprinkle salt and pepper on the chicken and bake until mostly

cooked (about 30 minutes). Remove from oven, cut into bite size

chunks and set aside.

3.) Combine the ginger, olive oil, lime juice, cilantro, and salt and

pepper to taste in a salad bowl and mix well. Add the greens and toss

with the dressing.

4.) Add the greens to a plane and top with peach, avocado, and

chicken. Sprinkle with onion and serve.
