I came close to calling this recipe PROTEIN packed Primal Pizza Muffin, but it sounded kinda BRO-recipesque ( I guess a BRO wouldn’t say esque)! Anyway, obviously the reason I “wanted” to bring this up, is because this muffin is packed with awesome protein (and fat): grass-fed beef, grass-fed based cheeses, and bacon!

Sweet, breakfast type muffins are awesome, easy to make, and well, duh they are SWEET!

Savory muffins are actually my favorite! They are generally, tougher to make, because of the consistency, but if you get one right, you get it RIGHT! Why are they my favorite? Because, they make the perfect mid-anything snacks!

The ratios on MY savory muffin recipes are always balanced (as are most of my recipes): good quality saturated fat, protein, and carbohydrates.

One of these bad boys mid-morning will keep your metabolic rate HIGH and your blood sugar regulated!

Bacon Wrapped Primal Pizza Muffin

Makes: 15 muffins



  • ½ cup coconut flour
  • ¼ cup tapioca flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. garlic powder
  • 2 tsp. red pepper flakes
  • ½ tsp. white pepper (black if you don’t have white)


  • ¼ cup red onions, diced
  • ¼ cup mini-portabella mushrooms, diced
  • ¼ cup red bell pepper, diced
  • ¼ cup green onions, diced
  • 3 Tbsp. coconut oil (1 for cooking beef, 2 for muffin)
  • 3 eggs

Other (wet):

  • 1 cup organic pizza sauce
  • 1 cup cheddar, shredded (I used KerryGold)
  • 4 oz. Chevre goat cheese (you can use 8 oz. if you want more)
  • ½ lb. grass-fed beef, ground
  • 15 slices bacon (I used Applegate)

Steps to crEATe:

1.)    Prepare, chop, hunt and gather all ingredients. Heat oven to 375°

2.)    Combine all DRY ingredients in a large mixing bowl, whisk.

3.)    In medium sauce pan, heat 1 Tbsp. coconut oil and cook ground grass-fed beef for about 3 minutes, just browning outside.

4.)    Whisk eggs in small bowl, set aside. Melt 2 Tbsp. coconut oil (you can use same sauce pan used to cook beef).

5.)    Begin adding WET ingredients to dry: eggs, onions, mushrooms, bell pepper, green onions, and melted coconut oil. Then add Other (Wet) ingredients: pizza sauce, cheddar, goat cheese, and grass-fed beef. Mix, until all flour is dissolved.

*Note: This batter will NOT be like normal muffin recipes, but it’s GOOD, trust me!
6.) Grease muffin tin, mostly the bottom with coconut oil. Line you muffin tins with bacon, wrapping circle. Add batter, as you normally would in the middle of bacon.

7.) This recipe made 15 muffins, BUT you could LOAD up the compartments with batter to make 12 large muffins! Your call, still amazingly tasty, DUH!

8.) Bake for 20 minutes at 375°. Serve warm, you can refrigerate for snacks and such!
