- 1 ½ cup white rice flour
- ½ cup tapioca flour
- ½ tsp. salt
- ½ tsp. baking soda
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- 4 bananas, mashed
- 2 eggs
- 4 Tbsp. butter, room temperature
- 4 Tbsp. coconut oil, melted
- 1 tsp. vanilla extract
- ½ cup chocolate chips
- 5 slices of bacon, chopped
Steps to crEATe:
1.) Heat oven to 350°. Grease a bread loaf pan with coconut oil. Set aside.
2.) Add all dry ingredients to a large mixing bowl. Set aside.
3.) Cook 5 slices of organic bacon about 4/5 crispy. Set aside.
4.) Whisk eggs in small bowl. Add vanilla.
5.) Add egg mixture, mashed bananas, room temperature butter, melted coconut oil and ¾ of bacon to dry mixture in large mixing bowl. Mix well until all flour is dissolved. Fold in chocolate chips.
6.) Pour batter in greased bread loaf pan. Sprinkle remaining bacon on top and any extra chocolate chips you want/have.
7.) Bake at 350° for 40 minutes.
*Note: For dairy free, substitute butter for coconut oil.
