Bacon and Root Vegetable Hash


  •  2 slices bacon, chopped
  • 2 eggs
  •  ¼ cup sweet potatoes, thinly chopped
  •  1 small carrot, thinly chopped
  •  1 golden beet, thinly chopped
  •  ¼ cup green onions
  •  Coconut oil or butter


1.) Heat skillet on medium high heat. Add oil or butter. Toss in sweet

potatoes, carrots, and beets. Also add bacon. Cook and stir off

and on for about 7-9 minutes, or until veggies soften and bacon


2.) Either in separate skillet or after your remove hash. Crack two

eggs in coconut oil and fry.

3.) Add hash to plate and top with fried eggs. Top with green onions.
